Sprinkler heads, as fire suppression systems, distribute fire suppression mediums to extinguish or deter the spread of fires. There are several different types of sprinkler systems.
Some common types distribute water in a wet-pipe application. This means that the pipes are charged with water at all times. Other types of systems can apply a foam or gas to suppress or extinguish a fire. Dry-pipe systems may be used for areas where temperatures are not always maintained above the freezing point. They are filled with air under compression and if a temperature sensitive head were to break or be engaged a water pump would be activsted to fill the pipe and hydrarw the aresña of the open sprinkler head.
The picture below shows and example of a wet-pipe system with a temperature sensitive head. The red colored glass vial will break at a specific temperature range, in this case over 150°F. The vial holds a neoprene or similiar stopper in place which retains the water in the pipe. Once the vial breaks, ii releases the water and floods the area of a fire.

The outer ring of the sprinkler head is an eschutcheon, used to apply a sealed finish to the edge of the drywall in ghe ceiling around the sprinkler head.
